Come Look At My Balls!
I made Greek Turkey Meatballs last night and I was so proud that I decided to dedicate an entire post to them.
It is a WW (formerly Weight Watchers) recipe so I can't take total credit, but I'm tooting my own horn for how good they turned out.
The list of ingredients is as follows:
- Cooking spray- 1 spray(s)
- Uncooked extra lean ground turkey breast- ¾ pound(s), skinless
- Uncooked onion(s)- 1 medium, chopped
- Dried plain breadcrumbs- ⅓ cup(s)
- 1 large egg(s)
- Grated Pecorino Romano cheese- ¼ cup(s)
- Garlic clove(s)- 4 medium clove(s), minced
- Fresh parsley- 3 Tbsp, flat-leaf chopped, plus additional for garnish
- Fresh mint leaves- 1 Tbsp, chopped, plus additional for garnish
- Dried oregano- 2 tsp
- Table salt- 1 tsp
- Black pepper- ¼ tsp
- Ground cinnamon- ½ tsp, divided
- Olive oil- 1 Tbsp
- Canned diced tomatoes- 28 oz
- Canned tomato paste- 3 Tbsp
I showed this recipe to a few friends and they thought it looked long and tedious, but don't be afraid. It really wasn't that tough.
The grocery store didn't have any fresh mint the day I was at the store. I Googled a substitute and it mentioned basil so I put some dried basil in because that is what I had on hand.
I also couldn't find pecorino romano cheese so I used a three cheese blend of romano, asiago, and parmesan.
Also, I know cinnamon may seem strange, but this is a Greek-inspired recipe hence the mint and cinnamon. Honestly, the cinnamon adds a really nice subtle flavor, it is not too overpowering. Turned out really nice.
I cooked up some whole wheat spaghetti to go with it because I already had some in the cupboard! So good!
To make it more Greek you could make the meatballs into a gyro or maybe serve it with orzo.
For next time, I will definitely cut my onions and parsley a little smaller.
