My daughter gave me a spaghetti squash, so I roasted it up in the oven and topped it with an Alfredo sauce. It turned out awesome.

If you haven't tried this you so need to because it is not only darn healthy, it's darn tasty.  You can find lots of spaghetti squash direction on YouTube.

Here's what I put together to mix up my easy Alfredo sauce:

  • 1 Bottle Bertolli Alfredo Sauce
  • 1 Diced Sweet Vidalia Onion
  • 1 Cup Diced Celery
  • 1 Box Fresh Sliced Mushrooms

After sauteing the veggies in olive oil I added the Alfredo Sauce.  Then poured that on the spaghetti squash and topped with fresh Parmigiano Reggiano and dried red pepper to taste.

It's a darn fine summer meal!
