You know how certain things spark certain memories? It can be smells, sights, or tastes that remind you of places, events, times, or whatever.

My Dad puts in a big garden every year and grows lots of wonderful veggies.  Both my Mom and Dad put in great effort to freeze, can, and dry the fresh produce as it's harvested.

There is a saying: "The best fishing boat is the one your buddy owns." Well, I've found that the best garden is the one my Dad grows.

I have benefited greatly from my folks generous gifts from the garden. One of the fruits from the field are my Dad's awesome pickled beets.

I have been the lucky recipient of many jars of pickled beets with hints of cinnamon and cloves. And for me that's become one of the flavors of fall.

Cool nights, trees dropping leaves, and the taste of pickled beets, all things that remind me that Autumn has arrived. What food reminds you of fall?

Oh... in case you happen to be among the beet haters remember that they are high in immune-boosting vitamin C, fiber, and essential minerals like potassium and manganese which is good for your bones, liver, and pancreas.

And it's always a good idea to be kind to your pancreas.
